Bloom your spices the right way

Blooming means warming whole or ground spices in oil so their fat-soluble flavour compounds release into the dish. Skip it and the same spices taste flat and dusty.

Keep the oil at a medium heat, add whole spices first, and watch for the moment they turn fragrant — usually 30 to 45 seconds. Ground spices need far less time and burn quickly.
