  • Water as required
  • Cloves 8-10
  • Cinnamon sticks 2
  • Black peppercorns 8-10
  • Vinegar 1 tbs
  • Salt 2 tsp or to taste
  • Rice 2 & ¼ cup (Soaked for an hour)
  • Oil 4-5 tbs
  • Chicken boneless 350 gms
  • Ginger garlic paste 2 tsp
  • Cumin seeds 1 tsp
  • Turmeric powder ½ tsp
  • Red chili powder 1 tsp or to taste
  • Coriander powder 1 tsp
  • Salt 1 tsp or to taste
  • Onions Medium 2
  • Carrots 1 cup
  • Corns boiled 1 cup
  • Capsicum 1 cup
  • Peas Boiled ½ cup
  • Green onion white part ½ cup
  • Black pepper Crushed 2 tsp
  • Soy Sauce 2-3 tbs
  • Green Chilies 3-4
  • White pepper powder 1 tsp
  • Green coriander ¼ Cup
  • Green onion stalk 1 Cup
  • Water ½ cup
HOW IT’S MADE

Method

  1. In a pot, add water, cloves, cinnamon stick, black peppercorns, vinegar and salt, bring it to a boil, add rice and boil until ¾ done, strain and set aside.
  2. In a wok, add oil, boneless chicken and ginger garlic paste, fry until chicken changes colour.
  3. Add cumin seeds, turmeric powder, red chili powder, coriander powder, salt and mix well.
  4. Add onion and mix well.
  5. Now add carrots, corns, capsicum, peas and green onion white part and mix well.
  6. Add the boiled rice, mix well and add crushed black pepper, soy sauce, green chilies, white pepper powder, green coriander, green onion stalk and water.
  7. Cook and steam cook for 10-15 minutes.
  8. Masala fried rice is ready.
